Condensed milk, also known as sweetened condensed milk, is one of the most used milk preservation formulas.

The condensed milk recipe consists of a reduction - reducing the volume of a liquid by partially evaporating it following the boiling process - of milk with a lot of sugar, which gives it a creamy-glutinous appearance and a sweet and intense taste.

Little known here and hardly used at all, condensed milk is very popular in all corners of the world, from Russia to the USA, from Brazil to India or Malaysia.

Condensed milk is indispensable for the preparation of Vietnamese coffee.

Used as a base for various desserts or served as is on bread, condensed milk first made a career during the Civil War in the United States where it was included in soldiers' rations because it had a high caloric/energy content, was easy to transport in preserves and does not spoil.
